The one with baby artichokes is among the most appreciated and well-known preserves in Southern Italy. We make it by peeling fresh artichokes by hand and then placing them in a solution of vinegar. water and lemon. Right after, we boil them for a few minutes. before storing them in glass jars with mint. garlic. salt and of course extra virgin olive oil.
They are perfect for a quick aperitif with friends!
