Featured products
The Abbondanza variety is an ancient soft wheat obtained in the 1950s without the use of X-ray treatments, unlike most modern grains which are obviously more productive.
Milling with natural stone keeps proteins, fibres and mineral salts intact: this makes it possible, unlike what happens with industrial flours, to grind the whole kernel. This means obtaining a true wholemeal flour: the outer bran provides lots of good fibres, very useful for the body's wellbeing. The endosperm, which surrounds the heart of the kernel, holds the main nutrients: carbohydrates, proteins and lipids that make up the richness of the grain. Finally, the germ, the precious heart of the kernel, which industrial flours are stripped of to promote an unnatural long shelf life. Stone milling, instead, manages to preserve the germ and its valuable vitamin E content, useful for its antioxidant function. The result is a tasty, rustic flour, with a natural straw-yellow colour, ideal for preparing many excellent sweet and savoury leavened goods.
This flour can be used for bread, pizza, cakes, egg pasta and baked goods.
